The potential of non-starter lactic acid bacteria from Cheddar cheese to colonise the gut

This study was undertaken to assess the potential of Non-Starter Lactic Acid Bacteria (NSLAB) from Cheddar cheese survive gastric transit and display probiotic-related traits including bile salt hydrolase activity, ability adhere gut epithelium inhibition enteropathogen binding. Populations NSLAB, up 107 CFU/g per were recovered following exposure Simulated Stomach Duodenum Passage (SSDP) conditions. A total 240 isolates randomly selected twelve cheeses assessed for probiotic traits. Two strains Lactobacillus paracasei DPC 7150 rhamnosus 7102 showed most potential. The Lb. displayed adhesion rates 64% 79%, respectively inhibited binding pathogenic Escherichia coli by >20%. research demonstrates that harbours potentially beneficial bacteria, a large portion which can simulated digestion exhibit health effects once ingested.
